Prepared with fresh Hawaiian ginger, this naturally flavored roe is a terrific example of how Asian ingredients have become part of today's culinary vocabulary. The flavor is piquant and easily fits into Asian or Western themed dishes. Serve this roe on those delicately colored shrimp chips found in Asian markets, or substitute any thin, not too crisp rice cracker. It is also wonderful used as an ingredient in a stuffing for Thai or Vietnamese rice paper rolls - we especially like a combination of crab, julienne of cucumber, carrot, fresh mint and coriander.
