The Hackleback Sturgeon is indigenous to the Great Lakes and Mississippi River systems. The relatively small sturgeon produces a small egg with a rich, nutty finish. This is a great caviar to incorporate into dishes, as it has a smaller less delicate bead. Hackleback caviar has a deep dark-brown to black hue.
